Ingredients:
- 1 cup almond flour
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup dried cherries, chopped
- 1/4 cup almond slices
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1 egg
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions:
In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy
Add the egg, vanilla extract, and almond extract
Mix until well combined
In a separate bowl, whisk together the almond flour, all-purpose flour, baking powder, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms
Fold in the chopped dried cherries and almond slices
Cover the dough and refrigerate for at least 30 minutes
Preheat your oven to 350F 175C and line a baking sheet with parchment paper
Form the chilled dough into small balls and place them on the prepared baking sheet
Gently flatten each ball with the back of a fork
Bake the cookies in the preheated oven for 10-12 minutes or until the edges turn golden brown
Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
