Ingredients:
- 20 large Medjool dates, pitted
- 1/4 cup almond butter
- 1/4 cup tahini
- 1/4 cup smooth peanut butter
- 1/4 cup shredded coconut
- 1/4 cup chopped nuts such as almonds, walnuts, or pecans
- 1/4 cup dried cranberries or raisins
- 1 cup vegan dark chocolate chips
- 1 tablespoon coconut oil
Instructions:
In a small bowl, mix almond butter, tahini, or peanut butter with the shredded coconut
Stuff each date with a teaspoon of one of the fillings: almond coconut mixture, chopped nuts, dried cranberries, or raisins
