Indulge in these decadent vegan treats featuring stuffed Medjool dates covered in rich dark chocolate. Choose from five delicious fillings including almond coconut, mixed nuts, dried cranberries, and raisins.

Ingredients:

  • 20 large Medjool dates, pitted
  • 1/4 cup almond butter
  • 1/4 cup tahini
  • 1/4 cup smooth peanut butter
  • 1/4 cup shredded coconut
  • 1/4 cup chopped nuts such as almonds, walnuts, or pecans
  • 1/4 cup dried cranberries or raisins
  • 1 cup vegan dark chocolate chips
  • 1 tablespoon coconut oil

Instructions:

In a small bowl, mix almond butter, tahini, or peanut butter with the shredded coconut

Stuff each date with a teaspoon of one of the fillings: almond coconut mixture, chopped nuts, dried cranberries, or raisins

In a microwave-safe bowl, melt the vegan dark chocolate chips and coconut oil in 30-second intervals until smooth

Dip each stuffed date into the melted chocolate, ensuring its evenly coated

Place the chocolate-covered dates on a parchment-lined tray and refrigerate until the chocolate hardens, about 30 minutes
