Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/2 red bell pepper, diced
- 1/2 cucumber, diced
- 1/4 red onion, finely chopped
- 1 avocado, diced
Instructions:
In a medium saucepan, combine quinoa and water
Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed and quinoa is tender
Remove quinoa from heat and let it cool for 5 minutes
In a small bowl, whisk together lime juice, olive oil, sea salt, and black pepper to make the dressing
In a large mixing bowl, combine cooked quinoa, chopped cilantro, diced red bell pepper, cucumber, red onion, and diced avocado
Pour the dressing over the salad ingredients and toss gently until everything is evenly coated
Serve immediately or chill in the refrigerator for at least 30 minutes before serving
