Ingredients:
- 1 cup cooked quinoa
- 1 cup black beans, drained and rinsed
- 1/2 cup rolled oats
- 1/2 cup grated carrots
- 1/4 cup finely chopped red onion
- 2 cloves garlic, minced
- 1/4 cup chopped fresh cilantro
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- 1/4 cup breadcrumbs
- 4 whole wheat burger buns
- Lettuce, tomato, and avocado slices for toppings
Instructions:
Grate carrots, minced garlic, cilantro, ground cumin, smoked paprika, salt, and pepper into a food processor
Add the black beans and process until everything is smooth
Pulse the mixture until its mostly smooth but still has some chunks
Add the cooked quinoa and breadcrumbs to the bowl and mix them in
Mix until everything is mixed in evenly
Make burger patties out of the four equal parts of the mixture
Set a grill or grill pan over medium-high heat to get it hot
Lightly oil the grill grates to keep food from sticking
The veggie burger patties should be grilled for four to five minutes on each side, or until they are nicely browned and warm all the way through
Put the whole wheat burger buns on the grill and toast them for one minute, or until they are just barely golden
Place a lettuce leaf on the bottom bun of each veggie burger, then add a veggie patty, tomato slices, and avocado slices
Put the other half of the bun on top and serve hot
