Ingredients:
- 1 lb ground chicken
- 1/2 cup diced carrots
- 1/2 cup diced celery
- 1/2 cup frozen peas
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup chicken broth
- 1/2 cup milk
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 4 hamburger buns
- 4 slices of cheddar cheese
- 1 tablespoon vegetable oil
- 1 tablespoon chopped fresh parsley for garnish
Instructions:
In a large skillet, heat the vegetable oil over medium-high heat
Add the ground chicken and cook until browned and cooked through, breaking it apart with a spatula as it cooks
Remove from the skillet and set aside
In the same skillet, melt the butter over medium heat
Add the diced carrots, celery, peas, onion, and minced garlic
Saut until the vegetables are tender
Stir in the all-purpose flour and cook for a minute to eliminate the raw flour taste
Gradually add the chicken broth and milk, stirring constantly until the mixture thickens
Return the cooked ground chicken to the skillet
Season with dried thyme, salt, and pepper
Stir to combine
Split the hamburger buns and toast them until lightly browned
To assemble the burgers, place a slice of cheddar cheese on the bottom half of each bun
Top with a generous portion of the chicken pot pie filling and garnish with chopped fresh parsley
Finish by placing the top half of the bun on the filling to create the burger
