Ingredients:
- 6 large potatoes, baked
- 1 cup sour cream
- 1/2 cup butter, softened
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup chopped green onions
- Salt and pepper to taste
- 1/2 cup cooked and crumbled bacon optional
- 1/4 cup chopped fresh parsley optional
Instructions:
Preheat oven to 350F 175C
Cut baked potatoes into cubes and place in a large mixing bowl
In the same bowl, add sour cream, softened butter, milk, shredded cheddar cheese, chopped green onions, salt, and pepper
Using a potato masher, mash everything together until well combined
Transfer the mixture into a greased casserole dish, spreading it out evenly
If desired, sprinkle cooked and crumbled bacon over the top
Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is heated through
Garnish with chopped fresh parsley before serving, if desired
