Ingredients:
- 8 oz linguine pasta
- 1 lb large shrimp, peeled and deveined
- 2 medium zucchini, spiralized
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Red pepper flakes optional
- 2 tablespoons chopped fresh parsley
Instructions:
As directed on the package, cook the linguine pasta
Once its done, drain it and set it aside
Warm up the olive oil in a big pan over medium-high heat
For about one minute, until the garlic smells good, add the minced garlic
Put the shrimp in the pan and cook for about two to three minutes on each side, until they are pink and opaque
When you add the spiralized zucchini to the pan, cook for another two minutes or until the zucchini is soft
You can add red pepper flakes, salt, and pepper to taste
Toss the cooked linguine with the shrimp and zucchini in the pan after adding it
Take it off the heat and add the chopped parsley as a garnish before serving
