Ingredients:
- 1 cup vegan graham cracker crumbs
- 1/4 cup melted vegan butter
- 1/4 cup maple syrup
- 1 cup creamy peanut butter
- 1/2 cup coconut cream
- 1/4 cup coconut sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1/4 cup crushed roasted peanuts optional, for topping
Instructions:
Set the oven to 350F 175C and heat it up
Put the graham cracker crumbs, melted vegan butter, and maple syrup in a bowl
Mix everything together well
Spread the mixture out evenly in the bottom of an 8x8-inch baking dish that has been lined with parchment paper
Mix the peanut butter, coconut cream, coconut sugar, cornstarch, and vanilla extract in a different bowl until the mixture is smooth and creamy
Put the peanut butter mix on top of the crust in the baking dish
Put it in the oven for 25 to 30 minutes, or until the edges turn a little golden and the middle is set
Take it out of the oven and let it cool down at room temperature
Then put it in the fridge for at least two hours to set
Once its set, cut it into bars and, if you want, sprinkle crushed roasted peanuts on top before serving
