Ingredients:
- 1 lb ground turkey
- 1 medium cauliflower, grated into rice-like texture
- 8 oz mushrooms, sliced
- 2 cups shredded mozzarella cheese
- 1/2 cup chicken broth
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
Instructions:
Preheat oven to 375F 190C
In a skillet, heat olive oil over medium heat
Add minced garlic and cook until fragrant
Add ground turkey to the skillet and cook until browned, breaking it up with a spoon
Add sliced mushrooms to the skillet and cook until they start to soften
Stir in cauliflower rice, dried thyme, salt, and black pepper
Cook for another 5 minutes
Pour chicken broth into the skillet and let it simmer until slightly reduced
Transfer the mixture to a casserole dish and sprinkle shredded mozzarella cheese on top
Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown
Serve hot and enjoy
